Ingredients

250 g grilled aubergines​
200 g mozzarella​
100 g tomato purée​
Extra virgin olive oil, as needed​
Salt, as needed​
Fresh basil leaves, for garnish

Preparation

Let the grilled aubergines thaw at room temperature.​

Place them on a baking tray lined with baking paper and top with a drizzle of olive oil, a spoonful of tomato purée and the mozzarella. Sprinkle with a pinch of salt and bake for 15 minutes at 180°C.​

Garnish the light mini pizzas with a few fresh basil leaves.​
