Ingredients

150 g grilled courgettes
100 g sliced pancetta
50 g mild provola
Extra virgin olive oil to taste
1 tablespoon grated Parmesan
2 tablespoons breadcrumbs for coating

Preparation

Let the grilled courgettes thaw at room temperature.

Pat them dry before starting to assemble the rolls. Lay a slice of pancetta on the first courgette slice, add the provola and then roll it up. Dip each roll in the oil, then in the breadcrumbs to coat it.

Arrange the rolls in a baking dish and, before baking, sprinkle them with Parmesan. Brown in a preheated fan oven at 200°C for 10–12 minutes.

Wait for them to cool partially or completely, and serve your delicious gratinated courgette rolls.
